"Brewers make the wort; yeast makes the beer"
I've never tried 1728 for an irish red - how much smoky character can you
tolerate? It might be an interesting combination.
I have used 1028 and 1084 - both work well
what about 1968? or 1275? Or even 1056?
good luck

Judges and stewards are still needed in Chicago for the AHA NHC 1st round.
Judging will occur this coming weekend, April 25-27, at the Rock Bottom
in Chicago located at the corner of State St. and Grand Ave. We're
hoping to only need the Friday and Saturday sessions.
A parking garage has recently opened across the street from the pub on
Grand Ave. that has modest weekend parking rates. The price is $6.00
for up to 10 hours of parking. This is significantly cheaper than other
lots and easier than feeding the meters every 1.5-2 hours.
Breakfast, lunch, beer and mead will be provided on Saturday.
All of the details, as well as online judge registration, is at
http://www.chibeer.org.
You can also contact the Judging Coordinator, Joe Preiser, directly
(joe(a)chibeer.org, 630-285-7688).

Hello, this is a nuisance message advising mba(a)thebarn.com that I am
changing my beer address to a home location. Please send lower priority
messages to mnbrewing(a)earthlink.net. I will try to respond daily.
High priority messages can be sent to my work address at
Rick.oftel(a)toro.com
I recently un-subscribed from Yahoo groups due to the volume of junk
mail being directed to my work address and due to the general
frustration experienced trying to find various flashcards, recipes,
locations to upload, download, sideload, and overload. Poking around a
site without a index or series of hot links is just not my cup of beer.
I know I missed finding a tremendous bunch of stuff that was put there
for the benefit of our BJCP class. I apologize to the writers and
uploaders of this information.
Enough said - now go have a beer

Subject: Speakers and Topics at 2003 AHA Conference
04/17/2003 09:29
AM
Other than sharing your homebrew with several hundred new friends, you
attend the AHA Conference to hear professionals and other homebrewers teach
you something new and different; dare we say, exciting? We're confident our
speaker lineup will be the best you've ever seen, all conveniently blocked
by topic. <?xml:namespace prefix = o ns
= "urn:schemas-microsoft-com:office:office" />
Judging and evaluating beers is the next step for many homebrewers. BJCP
judges such as grand master Gordon Strong and Midwest BJCP representative
Rex Halfpenny will teach you how to pass the BJCP exam and how to begin
objectively evaluating your beers.
Learn the particulars of fermented beverages beyond beer. Sake expert Fred
Eckhardt, and Ken Schram, author of the forthcoming "The Complete
Meadmaker", will enlighten you on these alternative fermentations. We are
also pleased to welcome Charles McGonegal, owner of the local AEppelTreow
winery, to share his practical knowledge of producing cider.
The professional brewers we have invited won't simply tell you how to brew
commercially; they'll share their favorite "tricks of the trade" that will
help you to produce better beers at home. For instance, Flossmoor Station's
Todd Ashman will teach you about using unconventional adjuncts in your
beer. Pete Crowley and Barnaby Struve from our local Rock Bottom breweries
will share tips on recipe formulation. We've also invited Jeff Levine from
Dragonmead Microbrewery (<?xml:namespace prefix = st1 ns
= "urn:schemas-microsoft-com:office:smarttags" />Warren, MI), Jason Ebel
from Two Brothers Brewing Co. (Warrenville, Illinois) and local boy made
good Larry Bell (Kalamazoo Brewing Co., Kalamazoo, MI) because they've
never forgotten homebrewing is what got them started in the first place.
Our experts are guaranteed to teach you something you do not know about
English, German and Belgian beers. The Two Bitter Men (Tony Babinec and
Steve Hamburg) will update you on the state of their favorite style and
also provide some hands-on tips for cellaring traditional British ales. Ray
Daniels, of Zymurgy, The New Brewer, and Real Ale Festival fame, gives you
the skinny on brewing historically accurate English-style ales. Fred Scheer
from Boscos Brewery (Nashville, TN), who trained as a Bräu and Malt meister
at Germany's Doemens Academy, shares his vast experience and knowledge on
German lagers. Roger Deschner, freshly returned from Cologne, will teach
you how to make a refreshing Kolsch for the hot, summer months. Wyeast's
Dave Logsdon and local sour beer guy Jeff Sparrow will chat about "Wild
Things," the bacteria that many brewers fear but give some Belgian ales
their unmistakable character.
For all of you advanced homebrewers who have longed for some really techy
talks over the past years, look no further. You'll want to be up on
Saturday morning for the "Super, Hyper, Techno-geek" block. Highlights
include Dr. Chris White of White Labs getting up-close and in-detail about
his favorite topics: yeast and fermentation. The ultra-geeky Al Korzonas
will talk about the biggest yet sorely neglected part of beer - water. We
are really excited to welcome Lyn Kruger and Mariellen Griesch from the
Siebel Institute of Technology to speak about the sensory evaluation of
beer. This is something homebrewers rarely have access to so it is not to
be missed.
One can not live by beer, alone. Ya gotta eat! Our experts will teach you
how to make cheese, sausage and bread the same place you make beer - at
home. We'll also have beer and food writers teach you how to combine the
two. Author of "Cooking With Beer," Lucy Saunders, will teach you how to do
just that. And Garrett Oliver from Brooklyn Brewing will teach you about
pairing beer food in addition to signing copies of his new book, "The
Brewmaster's Table."
We're still confirming more great speakers. As always, speaker
participation is subject to professional commitment, so make sure to check
up on the latest speaker information at www.chibeer.org/aha03. Register
now for the conference at www.beertown.org and save money. The early bird
registration deadline ends on May 14th!

Subject: Belgian Brewer to Speak at AHA Conference
04/17/2003 09:37
AM
We are pleased to announce the addition of Peter Bouckaert to the already
impressive lineup of speakers for the AHA National Homebrewers Conference.
Peter was the head brewer for 10 years at the legendary Rodenbach brewery
in Roeselare, Belgium where he produced the famous Rodenbach sour red ale.
He is currently the head brewer at the innovative New Belgium Brewing
Company in Fort Collins, CO; the first brewery dedicated to producing
Belgian-style ales in the U.S.
New Belgium Brewing produces a myriad of beer styles from a Belgian-style
pilsner to a dark abbey ale. Peter has directly applied his skills
developed at the Rodenbach brewery by creating La Folie, the first sour,
wood-aged beer of its kind in the U.S. As always, we want our speakers not
only to amaze you with their brewing knowledge but also give you something
you can use at home. This is your chance to ask Peter that burning question
on brewing Belgian-style ales.
Peter is in great demand to speak all over the world and we couldn't be
happier that he has decided to speak at the AHA Conference. Many thanks to
our friends at White Labs for arranging for Peter to attend. If you brew
Belgian-style ales at home then you won't want to miss this one.
Here's a notice from Kris England who is organizing the Pub Crawl for the
Upper Mississippi Mash-Out on Friday, May 2 after Friday night judging. It
should be a great time, and it's only $30! See details below and

Greetings homebrew fans, friends, family, and significant others. I
realize the greetings have become a little sparse and the traffic is
down a bit. Just wanted to peak your interest for this week end
activity at Great Waters. Saturday, we are having Gadget Day.
What's gadget day and what's in it for me? I'm glad you asked.
Gadget day is a day where you get to show and tell about your favorite
gadget. The process is simple. We call the meeting to order, have a
little business, possibly have a beer, and then the gadget contest
begins.
It works like this: You bring your gadget, you show and tell about
your gadget, and you get a beer. OK, maybe not a free beer but beer is
defiantly available. The more gadgets the better.
The real purpose of the event is to have some fun and showcase how much
different stuff is used by various brewers. So join the fun and dust
off (or build) that unique gadget and bring it along to gadget day.
Mike Swalinkavice is the originator of this idea and will be helping
with crowd control. Possibly he can do that drum roll used for comedy
shows that goes sort of like this "Pa dum cszzz"
Hope to see you this Saturday, 1:00 dull, at Greatwaters.
Here is a link for parking in St. Paul. (When you click on the parking
lot, it tells you how much it is, etc):
http://www.ilovesaintpaul.com/attractions/parking.html
<http://www.ilovesaintpaul.com/attractions/parking.html>
There's parking at the Excel center ramp off Kellogg Blvd.
Then you'd have to walk a few blocks past the Science Museum,
Rice Park, Landmark Center, etc... to Great Waters.
There's also a parking ramp in the Lawson Bldg. Just the
next block down from Great Waters.
