getting better organized. The following is the menu for the Banquet for the
Hoppy Halloween. We are very excited that our speaker this year will be

2) Do you want Grilled Chicken Breast or Roast Pork Loin
Roast Pork Loin or Grilled Chicken Breast (please specify) with a Barleywine
glaze/sauce

Dinner Rolls w/butter
Assorted bars for desert
Minimum of 4 homebrews on tap and up to 5 more cask conditioned ales served
on Beer engine. The Beer Engines will go on tap at Friday evenings judging
and will be served until empty.
Anyone attending the Banquet or helping judge/steward will recieve a custom
made Bottle opener.
Cost: $25.00 for anyone assisting in anyway with the Hoppy Halloween
Challenge or $30.00 for those who would just like to attend.

*1026 British Cask Ale Yeast.* A great choice for any cask conditioned
British Ale. Produces a nice malt profile with a hint of fruit. Finishes
dry and slightly tart. Apparent attenuation: 74-77%. Flocculation:
medium-high. Optimum temp: 63°-72° F
*1469 West Yorkshire Ale.* From a well-known and highly regarded brewery
in Keighley, West Yorkshire, England. Full chewy malt flavor and
character, but finishes dry, producing famously balanced beers. Moderate
nutty and stone-fruit esters. Bright beers easily achieved within days
without filtration. For production of cask-conditioned bitters, ESB and
mild ale. Alcohol tolerance approximately 9% ABV. Apparent attenuation:

of northern England comes this deep red, wickedly smooth, and decidedly
dangerous libation. Invigorating and strong, this double brown ale has
deep notes of caramel, mocha, toffee and chocolate. A wonderful beer to
enjoy over conversation with a group of friends... or to drink by
yourself, pint of Cumbrian in one hand, tumbler of Islay in the other...
either way, you are in for a bloody grand evening.
*Global Malt Kolsch Malt 4.5° L*
Just in! An additional base malt for all you all-grainers. From a
maltster co-op based in Osthofen, near Köln, Germany this malt is used
by some of the brewpubs in that city to make their trademark ale. Kölsch
malt has a light, sweet and extremely "German" flavor and aroma with a
little bit of biscuit character. We've had good results using a
multi-temp step mash with Kölsch malt, but a single infusion — although
not traditional — should work as well. Style nerds please take note: the
maltster rates the color of this malt at 9 EBC. If you use 100% Kölsch
malt for the grist of a Kölsch, you will be within spec according to
Eric Warner's /Kölsch/ (7-14 EBC, or 3.5-7 SRM — p. 51), but definitely
on the dark end of the BJCP guidelines. If you are brewing for a
competition, you may want to incorporate some pils or wheat malt into
the grain bill to dilute the color. We have limited amounts of sacks
available so please call ahead to ensure they are available.

This is just a reminder of the the club cider buy for those who didn't get
the first message. I have added a few tips for making hard cider form fresh
juice for those who haven't made hard cider.
* Add campden tablets or sulphur dioxide to inhibit wild yeast and
bacterial growth - wait 12-24 hours before pitching yeast
* Add pectic enzyme before pitching yeast to promote the clearing of
haze
* Add yeast nutrient to promote healthy fermentation (I use twice the
recommended amount for wine)
* Rehydrate dry yeast with goferm or by package directions
* Make a small yeast starter if using liquid yeast for must over 1.050
OG
* Aerate well
* Add sugar or other sweetener to raise OG

2008 MHBA Cider Buy
Mark Glewwe and I are in the process of organizing the annual cider buy from
Minnesota Harvest. The plan is to pick up the cider and distribute it at
the Teach-a-Friend-to-Homebrew event at Barley John's on Saturday November
1st. The price this year is $ 4.00 per gallon. The regular price in the
shop at the orchard is $5.00. If you are interested in participating in the

The fresh cider is unpasteurized and unpreserved and comes in plastic one
