I don't touch my meads for 8 to 24 months in that time a to sweet can change
into a great sweet
Have you tried just to shake the carboy to put the yeast back into the mead
it will settle back out in time.
I'm one that doze not use champagne yeast I adjust the honey to the yeast I
use to make a dry,semi or sweet

All of the options you mentioned are good ones. You will probably need to
make a little starter if you throw more yeast in - that alcohol level will
kill the little beasties before they even get a shot. I'm not sure of the
best brand.
I have a mixed category mead that I'm going to blend with FERMENTED cider,
so that it won't add any more sugar to the already too-sweet mead.
Another option (don't anyone throw things at me please!) is to dilute with
sterile water. Try it in a GLASS of the mead first, a) to find out if it
tastes any good that way and b) to discover percentage-wise how much water
to add.
Finally, the polish meads that were for sale at Wine Streets were REALLY
sweet. If you're quite sure the yeast is DEAD, bottle it the way it is.
Time will probably turn it into something really wonderful.

So, what are my options if a mead is too sweet?
I know I can add champagne yeast. If the alcohol level is already around
11%, how much more can champage yeast go? What's the best choice for yeast
here? Pasteur? Champagne? Premier Cuvee?
What about making another batch with the same type of honey and making it
dry and then blending?
Meadmakers, please let me know what you think.

Rick here with a really short (honest) message about the upcoming Christmas
Extravaganza. By now, most of you know the routine. You bring food, bring
beer, bring door prizes and have a really great time. We have something for
everyone although I have been asked NOT to play any Christmas songs on the
piano.
First, let's talk about club glasses. They are on route - scheduled to
arrive in the next few days and will be available for each current club
member. Additional glasses will be available for purchase for the
reasonable cost of $3.50 each or three for $10.00. These are really cool
glasses folks. The size of English half pints with a one color MHBA logo
below the bulge. We should have a good supply but remember, these make
great gifts.
What else is happening? Well, there is the great beer exchange where you
bring beer (in bottles - ok) and exchange beers with other folks. Remember,
bring your good stuff - not the back of the shelf dusted off relics that you
were thinking about pouring down the drain. Thanks.
Other stuff? How about the great food. I really don't need to say much
more. Every year is seems to get better. Just remember to get a chocolate
on your first trip through. They just don't last. Vote for your favorite
food items and everyone gets a prize.
Door prizes anyone? So far, we have a decent size box of stuff and our
crack team of solicitors is actively acquiring other goodies. Do you like
door prizes? How about bringing something to give away? All you need to do
is to go into your brewery and grab something. Doesn't matter what it is or
what it cost. Can someone else use it? Would someone else like it?
Consider it for a door prize. All you need to do is to identify who is
giving it away and place it on the door prize table. We'll take it from
there.
How about beer? Anyone like beer? For your dining enjoyment, the Prez is
planning on bringing a few dessert beers to be served on ICE CREAM. Yep,
just like last year at the BJCP training class. Ice cream night. Amazing
how nicely cherry, chocolate, stout, and porter mix with ice cream. You've
just got to attend to find out.
What did I miss? I don't know but when you think of it, please bring it. I
have a stash of plates, forks, knives etc so we are pretty much covered.
Serving things. If you bring something to share, please bring something to
serve it with.
Well, I promised a short message and already went overboard. The event
happens one week from Friday. Ready Set Go.

The Secret Santa Holiday Homebrew Exchange

We'll do this at the Christmas Party. Here's how it works:
For every bottle of homebrew you submit, you get a ticket. For each
ticket, you get to choose from the pool a bottle of beer to take home.
We'll have a drawing to determine the order. You can submit as few as
1 bottle or as many as 24 (1 case).
All bottles must be homebrew and labeled as to the style and brewer.
Anyone caught entering bud, miller, and the like will be publicly
shamed and possibly made to drink the stuff on the spot.
