I used 2 packs of 1272 and set the temp to 65. Fermentation appeared to have stopped (no
bubbles in the airlock) when I checked on Saturday. Gravity reading was 1040 so I knew it
had further to go (smelled/tasted very nice, albeit sweet). I shook the ale pail up for
almost a minute and increased the temp to 69 and the next day and still today it appears
to have restarted fermentation. I'm hoping it finishes low--for anyone know the
target gravity?
