I called Inver Grove Heights and was able to obtain the needed values. I have
updated the word document and attached it to this e-mail.
I also used Promash to calc the values for Ca & Mg from the hardness, let me
know if they seem out of line or I did something wrong. Strangely, I
calced the
Alkalinity using promash (input values were Hardness and pH) and the
values were
way off from what was given to me by the city.
Please update your city if you have reliable sources. Then mail back to the
clubs. I will post this on sphbc.org soon.
Thanks for the info guys!

FYI: This is going to the food press, and a colleague
at another publication forwarded to me.
Nice to see that its not only a handful of beer geeks
who think beer and cheese go together nicely. Cheese
geeks agree!
Cheese is the perfect hors d'oeuvres for the hectic
holiday season. Just buy it, slice it, and enjoy a
gourmet experience without the hassle of further
preparation. But what wines and beers go best with
different cheeses?
Jeff Roberts, Chief Consultant to the Vermont
Institute for Artisan Cheese, has the following
recommendations. Jeff is a renowned authority on
cheese and has taught cheese appreciation courses for
the American Cheese Society, French Culinary
Institute, and Vermont Cheese Council, among others.
His artisan cheese selections are all from Vermont,
the leading source or artisan cheeses in America, and
are available at specialty food markets and retail
cheese outlets across the country:
A Selection of Six Great Cheeses
With Beer and Wine Recommendations
Chèvre with herbs or pepper (Vermont Butter and Cheese
Company)
A classic fresh soft chèvre made from pasteurized
goats milk, it is ideal as an appetizer or an
accompaniment to salad.
Beer recommendations:
Pilsner-style beer, Wheat beer, Pale ale
Wine recommendations:
Champagne or sparkling wine, Chenin Blanc, Viognier
Les Pyramids or La Roche (Lazy Lady Farm)
Made from pasteurized goats milk, these soft-ripened
cheeses make great beginnings for dinner or an ideal
part of a dessert course.
Beer recommendations:
Amber lager, Brown Ale, Double ale
Wine recommendations:
Dry or semi-dry Riesling, Sauvignon Blanc,
Gewürztraminer
Two-year Cheddar (Shelburne Farms)
Made from Brown Swiss cows milk, this aged semi-firm
cheddar goes well with many holiday foods or simply by
itself.
Beer recommendations:
India Pale Ale, Steam beer, Christmas Ale
Wine recommendations:
Gewürztraminer, Medium-bodied Syrah, Medium-bodied
Zinfandel
Vermont Shepherd (Vermont Shepherd)
One of the pioneer, aged, semi-firm, sheep milk
cheeses in the United States, it deserves a prominent
place in any holiday feast.
Beer recommendations:
Doppelbock, Double or Triple ale, Oatmeal stout
Wine recommendations:
Oregon or Washington State Pinot Noir, Medium-bodied
California meritage blends, Medium to full-bodied
Merlot
Traditional Cheddar Wheel (Cabot Creamery)
The traditional country-store cheddar, made from
pasteurized cows milk, delivers rich, full-bodied,
moist flavors to every holiday meal.
Beer recommendations:
Porter, Double ale, Fruit beer
Wine recommendations
Petite Sirah, Medium-bodied Sangiovese, Zinfandel
Boucher Blue (Green Mountain Blue Cheese)
One of Vermonts pioneering blue cheeses, made from
cows milk, it combines classic flavors and moist
textures that appeal to every palate.
Beer recommendations:
Triple ale, Imperial stout, Barley wine
Wine recommendations:
Sweet dessert wine Gewürztraminer, Sauternes, or
Muscat, Late harvest Zinfandel, Port or Sherry
The Vermont Institute for Artisan Cheese, located at
the University of Vermont, is the nations first
comprehensive center devoted to artisan cheese.
Artisan cheese is produced, typically on small farms,
using traditional hand-crafted methods and local
ingredients. Its many varieties and high standards
have evolved from centuries of cheesemaking.

Funny this came up - somebody brought the Bewmaster's Reserve to a party last
Fri. The two things I recall saying were "pretty good Mai Bock" and "I thought
I paid a lot for my 2 qt growler of Old Eight."

Two other special products folks may be interested in for holiday gifts are:
Sam Adams Imperial Pilsener just hit the shelves last week. It comes in a 750ml
bottle.
Scaldis Prestige which is the regular Scaldis (Bush) beer aged in oak casks. It
comes in a champagne type bottle and is around $40. Sam's Wines & Spirits is
supposed to have a case and DiCarlo's Armanettis is also supposed to be getting
a case.

If you're like me, you're probably skeptical of any product Anheuser-Busch
belches out, dresses up in fancy packaging and throws onto retailers' shelves
just for the Holiday season.
This year, A-B has produced two distinctive seasonal products- Michelob
Celebrate and Brewmaster's Private Reserve. I would normally have written
these
off as "Budweiser in a Big Bottle" but that was before I read the package
labels. Michelob Celebrate is an oak-aged brew infused with vanilla
bean...with
an a.b.v. of 10%! It comes in a 1 pint, 8 oz. bottle packaged with a pair
of fancy Belgian-style etched snifters (those of you who attended the FoBAB,
may have already tasted this).
Brewmaster's Private Reserve, which comes in a 1 quart, 14.5 oz. bottle with
a Grolsch-type closure, boasts an a.b.v. of 8.5%. According to the back
label, this beer is essentially made from the first-runnings of a regular batch
of beer.
How do they taste? I dunno -haven't gotten that far yet. I just wanted to
let folks know that these products are in short supply. I bought one of four
of the Celebrate packages and one of six Private Reserve packages allotted
to Binny's in Orland Park. They set me back $11.99 and $8.99, respectively.
These product labels are "vintage-dated" (2005); maybe A-B intends to produce
these on an annual basis if they move quick enough.
Happy Holidays!

news and updates
-----------------------------------------------------------------
Hello fellow Homebrewers and Winemakers,
Sorry it has been a while since Midwest has sent a newsletter, the last 5
months have been very busy and exciting for us. We moved in to our new
location on July 8th and the move was much harder than we anticipated. We
sent out 25,000 of our new catalogs in early August just in time for
winemaking season. We were extremely busy from September 1st through early
November and we have finally had some time to get settled in to our new
location. After much fine tuning we are in the best position we have ever
been in to ship your orders in a timely manner. Please keep in mind that we
get an annual holiday rush from Thanksgiving to around December 20th. We
already have several "Packing Parties" planned where we stay late after
work, order some pizzas, drink some homebrews, and pack enough orders to
keep up with the demand.
As we go in to the hectic holiday season, remember that smiles and
complements are contagious. As you interact with friends, family, co-workers
and neighbors, try and go out of your way to spread a little holiday cheer.
Share a homebrew or bottle of wine with someone close and give a toast to
good food, good friends, good health, and living in America.
Cheers, The crew at Midwest

Shipping News
---------------------------------------------------------------------
Fedex vs. UPS :
We will now be offering both carriers to better serve your shipping needs
It has been 13 months since we switched from UPS to FedEx and we are still
happy with our decision. FedEx delivers Tuesday through Saturday vs.
Mon.-Fri. with UPS. Since most deliveries are to residential addresses and
most cutomers brew on the weekend, we felt that Saturday delivery was more
valuable to you. Based on damage claims and the feedback we get from our
customers, the condition of our boxes and their contents arrive in better
condition with Fedex. Our current on-time delivery (once they get the
package) with FedEx is 98.2%.
The only problem we have had with FedEx is delivery times to remote
locations. In some cases, customers who live in the mountains and other
isolated addresses have had longer than normal shipping times. We have
decided to add UPS as a shipping option on our on-line check out form. We
will be getting a daily pick up from UPS. We feel UPS is better equipped to
deliver to remote addresses than FedEx. Midwest still highly recommends
FedEx as our preferred shipping company. However, we will gladly ship your
order via UPS if you choose so.
