traditional recipe: 12 lbs. honey (1 gal.) for a 5 or 5.5 gal. batch. Add
acid after fermentation to taste. Use Wyeast's Sweet or Dry Mead yeast or
Premier Cuvee (my favorite - available at Semplex). Add slightly less than
the recommended nutrient and energizer. Soft water works best.
