attend the AHA Conference to hear professionals and other homebrewers teach

Judging and evaluating beers is the next step for many homebrewers. BJCP
judges such as grand master Gordon Strong and Midwest BJCP representative
Rex Halfpenny will teach you how to pass the BJCP exam and how to begin
objectively evaluating your beers.
Learn the particulars of fermented beverages beyond beer. Sake expert Fred
Eckhardt, and Ken Schram, author of the forthcoming "The Complete
Meadmaker", will enlighten you on these alternative fermentations. We are
also pleased to welcome Charles McGonegal, owner of the local AEppelTreow
winery, to share his practical knowledge of producing cider.
The professional brewers we have invited won't simply tell you how to brew
commercially; they'll share their favorite "tricks of the trade" that will
help you to produce better beers at home. For instance, Flossmoor Station's
Todd Ashman will teach you about using unconventional adjuncts in your
beer. Pete Crowley and Barnaby Struve from our local Rock Bottom breweries
will share tips on recipe formulation. We've also invited Jeff Levine from
Dragonmead Microbrewery (<?xml:namespace prefix = st1 ns
= "urn:schemas-microsoft-com:office:smarttags" />Warren, MI), Jason Ebel
from Two Brothers Brewing Co. (Warrenville, Illinois) and local boy made
good Larry Bell (Kalamazoo Brewing Co., Kalamazoo, MI) because they've
never forgotten homebrewing is what got them started in the first place.
Our experts are guaranteed to teach you something you do not know about
English, German and Belgian beers. The Two Bitter Men (Tony Babinec and
Steve Hamburg) will update you on the state of their favorite style and
also provide some hands-on tips for cellaring traditional British ales. Ray
Daniels, of Zymurgy, The New Brewer, and Real Ale Festival fame, gives you
the skinny on brewing historically accurate English-style ales. Fred Scheer
from Boscos Brewery (Nashville, TN), who trained as a Bräu and Malt meister
at Germany's Doemens Academy, shares his vast experience and knowledge on
German lagers. Roger Deschner, freshly returned from Cologne, will teach
you how to make a refreshing Kolsch for the hot, summer months. Wyeast's
Dave Logsdon and local sour beer guy Jeff Sparrow will chat about "Wild
Things," the bacteria that many brewers fear but give some Belgian ales
their unmistakable character.
For all of you advanced homebrewers who have longed for some really techy
talks over the past years, look no further. You'll want to be up on
Saturday morning for the "Super, Hyper, Techno-geek" block. Highlights
include Dr. Chris White of White Labs getting up-close and in-detail about
his favorite topics: yeast and fermentation. The ultra-geeky Al Korzonas
will talk about the biggest yet sorely neglected part of beer - water. We
are really excited to welcome Lyn Kruger and Mariellen Griesch from the
Siebel Institute of Technology to speak about the sensory evaluation of
beer. This is something homebrewers rarely have access to so it is not to
be missed.
One can not live by beer, alone. Ya gotta eat! Our experts will teach you
how to make cheese, sausage and bread the same place you make beer - at
home. We'll also have beer and food writers teach you how to combine the
two. Author of "Cooking With Beer," Lucy Saunders, will teach you how to do
just that. And Garrett Oliver from Brooklyn Brewing will teach you about
pairing beer food in addition to signing copies of his new book, "The
Brewmaster's Table."
