While I will cool the wert down in plastic, my
question is, at what
temperture is it safe to transfer the wert to the glass carboy without
causing damage to the glass? (..or should I not worry about this?..)
When I use glass primaries, I try to get the wort
as close to pitching temperature as possible. It's
best not to push it, given the potential consequences.
Quick temperature cycles stress glass and weaken it
until it becomes too brittle to handle the stresses
of the next cycle, that short drop to the floor, the
weight of its contents, etc... Naturally, it will
never fail at an *opportune* time :-)
I've mostly switched to open/loosely-covered plastic
fermenters for everything, and secondary in cornies.
Some days, I miss the alcoholic lava lamp, but when
I move the fermenters I enjoy not having to lug
around heavy, brittle, skunking-transparent glass.
