Let the beer freeze solid in a cornie keg. If its slushy, its not cold enough, long
enough. Push the beer out with CO2. Depending on what you're trying to make, you
night want to do this two or three times.

So, it looks like I should use a bucket rather than a carboy.
Do I then just use a slotted spoon to scoop out the ice or some of the ice?
