Well it’s time for another “cellar update”. Things have really been cracking around here. As soon as the weather started to shape up, the pace intensified to get the first four fermentation vessels installed, fitted and programmed by the second week of June. (We missed our original deadline by one week!!) Consequently, we had about thirty people representing five different trades trying to work in the same area. Then throw in a couple of Germans who are responsible for training and programming. Yikes. And the painters were the ones to really feel the squeeze.
