I can't comment on flavor, other than that I've had great results with both
White Labs and WYeast versions. One thing I can say about the White Labs Wit
yeast is that it seems to be a bit sensitive to temperature. In my first batch
in my new residence a month ago, I got a stuck fermentation using this yeast. I
used a large, healthy starter, almost pure oxygen, got a short lag (<12 hrs.),
but she still pooped out at about 1.03x. The temperature of the wort/beer when
I measured was about 64F. I brought the fermenters upstairs and they started
right up again. I have since noticed that the optimum temp. range is 67-74F for
White Labs WLP400 and 62-75F for WYeast 3944. If you have a cool basement like
mine, WYeast may be a better choice.

I am going to brew a witbier in the relatively near
future and I was wondering about other choices for wit
yeast besides Wyeast. I would also like to stay away
from slant cultures if possible. How do the White Labs
wit strains compare with Wyeast?
