Turkey Beer White Chili

Part 1.  Beer Shredded Turkey

In a crockpot combine:

1 split turkey breast, bone in

1 package Lipton Onion Soup mix

1 bottle beer

1 stick butter

Cook on low for 8hrs or overnight.

Shred the turkey using two forks and remove the bones.  Have some on a

bun.  Save half for the chili, or start over at Part 1.

Part 2. Chili

1 chopped onion

2 finely chopped serrano or jalapeno peppers

3 stalks celery chopped

2 cloves garlic finely chopped

1 tsp whole cumin

2 T butter or vegatible oil

1/4 c flour

1/2 recipe of beer shredded turkey (~1 1/2 cups with sauce)

32 oz chicken broth

2 cups cooked black eyed peas

1 cup frozen sweet corn

1/4 c chopped cilantro

1 t salt

1/4 t pepper

1/2 t oregano

Saute the onion, peppers, garlic, celery, and cumin in oil until soft.  Stir in flour and saute 2 minutes more. Combine with the remaining ingredients and simmer for 30 min.
