You can add either one any time during the boil, but your proposed schedule is a good one.
I like to minimize boiling the honey to keep more of the flavor and aroma from boiling
off. For both, I recommend pre-dissolving them in H20 rather than just dumping them into
the kettle. This will help prevent scorching on the bottle of the boil kettle.
