So with mutiple entries I don't have to figure out which one is best
(or worst) ahead of time :-)
That means I should do an eis-lambic experiment, that should lower the
pH of the beer even more. It seems unlikely to get it even a tenth of
a pH or so lower but I may have to try. That isn't going to make the
beer any more mellow.
