Sorry for sticking my neck out again but that's what computers are so good
for. The St.Paul system is a very large system that makes a very large
batch of beer. Good bad or indifferent, it is very large and intimidating
to many beginning brewers and it is owned by the St. Paul club. The reason
I suggested a smaller and foldable system built into or around a trailer was
honestly because it is smaller and foldable and it doesn't require 10
fermenters per batch. I was envisioning a converted keg system powered
primarily by gravity and propane that would be capable of operating at a
beer festival for an entire day and producing maybe 3 or 4 batches in an 8
hour period and would always have something "happening."
Most folks that watch a demonstration are captivated for 10 minutes, stick
around for 20 or 30, and disappear after a few samples or when the talking
stops.
Anyhow, it was an idea that I thought worth sharing. It would take a bunch
of engineering to do it correctly and some ingenuity to collapse it down for
storage.

The big brew system requires a pick up truck and
can't just be towed.
A truly mobile system would be cool.
The big brew system could use a few improvements, in my opinion.

How about designing and producing a mobile brewery in a small trailer?
