My recipe is in the SOTM article in the MHBA newsletter from somewhere
around June/July 2005. The version I added some Brettanomyces to has
taken a few medals. The White Labs Saison strains is great and you
can ferment it pretty warm 80-85 F didn't cause any problems, having a
temperature controlled fermenting box does come in handy for this strain
since it is rarely that warm in the house
Be sure to add a fair percentage of sugar to get the beer to finish dry,
sweet saisons aren't real pleasant.
