Hi Jim,
When it comes to cooking, I generally don't get too uptight about recipes, and I
often experiment using whatever I have on hand, but here is the basic formula for the
Hoppy Joes from the Christmas Party:
4# Ground Beast, browned and drained
1 Lg. can Vegetable Beef Soup
2 Sm cans Chicken Gumbo Soup
3 Med. Chopped onions
1 Cup Chopped celery
3 bottles of IPA--one in the pot and two in the cook. I used Mojo for the Christmas
Party.
Mustard, Ketchup, Salt and Pepper to taste.
Simmer uncovered for 30 minutes over low heat--longer is better.
For the Christmas party I made it the night before and threw it in the crock pot on the
afternoon of the party. Like a lot of things, it gets better with age. The recipe can
easily be modified depending on the size of the group, but I usually make more because it
works well for leftovers. I like this basic recipe for parties because it is hassle-free
and goes well with a pint or two of good beer. If you use extra lean Beast and the
Campbell's "Healthy Choice" version of the soups, it is actually not too
bad for pub food...
Cooking is a lot like brewing--Relax, don't worry, have a homebrew, and everything
will be marvelous...
