How big a boil volume do you have? Do you use immersion chilling? If your
kettle is big enough, you could chill IN THE KETTLE, then transfer directly
to your carboy. One less transfer - one less chance for infection.

Subject: Glass vs Plastic
As Rick mentioned in one of his emails, there are many opinions on glass vs
plastic. It's just like at the grocery store - paper or plastic.
I enjoy seeing activity in the airlock, then I know fermentation is taking
place. It would be interesting to carry a full glass carboy downstairs and
I don't think I would want to be around if it ever decided to meet the
concrete floor by accident.
At my next brew session, I will probably cool in plastic (much easier to
carry plastic bucket downstairs), then rack to class for fermentation.
