Hello Ladies and Gentlemen.
I am in the process of making a doppelbock and have a quick question.
I am using WLP833 yeast (made a yeast starter and oxygenated for about a minute or so). It is fermenting at 52F for 7 days now.
How would I know when to increase temp for the diacetyl rest?
I am planning to take it out of freezer and let it sit in my basement (60F ) for about 3 days. (Please suggest if I should be doing something else).

If you are have recovered from Mash Out and would like to judge/steward some more, I am still looking for help with the 100 entries we received for the Winter Beer Dabbler Home Brew Contest.
Judging will be held this Saturday, February 1st at O'Gara's Bar in St. Paul. There will be a morning and afternoon judging sessions. Please sign up to judge or steward---all levels of experience are welcome. Judges with limited/no experience will be paired with judges that have successfully completed the BJCP exam.

Hey all... first off I want to thank everyone that came by Saturday to help
with the sort!
We have a little bit of work left to get the entries ready for judging and
we are going to meet tomorrow (Tuesday January 21st) at 7pm at PDBC in
Roseville. Also, we found a pallet of entries that didn't get moved into
the conference room at NB so we'll need some extra help moving the entries
from the Northern Brewer warehouse in Roseville to the brewery and then
labeling those extra entries.
Drop me a message letting me know if you can make it tomorrow or if you have
any questions!

Hey guys.
I made a very clear cider last year without adding any pectic enzyme. This year I did not add it either and even though it has been sitting in secondary for over a month, it is not clearing up like the other one did.
To clear it up, should I add the pectic enzyme now?
Or is there other things I should do?

to say (well most of you do).
I'm still waiting the 100% go-ahead for bottle sorting, but tentatively
we're scheduled for sorting at the Northern Brewer Warehouse starting around
10am this coming Saturday (January 18th).
If you don't know what I'm talking about, I'm talking about gathering a team
of awesome people to help label and sort 2000 bottles of beer. Even if you
can only stop by for a short amount of time - all help is greatly
appreciated! 2000 bottles may sound like a lot, but it does go quicker than
you'd think.
Also, I'm looking for volunteers to pick up the entries that were dropped
off at both Northern Brewer retail locations (Minneapolis & St. Paul) and
Midwest Supplies (St. Louis Park). Generally there's 5-10 cases worth of
entries at both locations - most of the time I can fit them all in my
Corolla with room to spare. Just pick them up on your way to the NB
warehouse on Saturday!
And another also, we need empty 24-pack cases and 6-pack holders to hold
these bottles. If you know of a good source for them, or have a bunch, let
me know so I can get a count. Bring them to the sort with you, and if you
can't make it to the sort, we can make some arrangements for them to be
picked up. With 2000 bottles we need at least 85 cases but I'd much rather
have too many than not enough!

Competition
Judges,
On Feb. 22nd we will be hosting our 3rd annual Lucette Winter Home Brew
Competition! My name is
Jon Christiansen and I will, again, be the organizer of this home brew
competition. I have hosted a variety
of beer competitions and this one is slowly gaining popularity. Last year we
had just under 50 entries and
we hope to get closer to 100 this year. The judging all takes place inside
of the brewery.
I am looking for people that need judging and non-judging BJCP points. This
comp is sanctioned and points will be
awarded to those that help. We will also have some light snacks throughout
the day, usually something local and
tasty.
This is a fun competition with a lot of good people and in my past
experience, some great beers have been entered coming in
from around the country. Our first year we had beer from at least 5 states
as well as last year. Hand etched glassware
is awarded to the top 4 entries and many prizes and keepsakes for other
people as well. Our goal here is, of course, to
give great feedback to those honing their home brewing skills so I always
love to have as many BJCP recognized or above
judges available.
If you would like to help out and earn some points, please respond to this
e-mail. I will collect names and judges will
be picked on a first come first serve basis.Food will be provided as well
including meat and vegetarian snacks. :) Approaching almost 100 beers is our
goal this year so I hope to get around 20 judges.
