A multipart article by Chris Colby at the Beer and Wine Journal has a couple of nice charts that show graphically the risks of not pitching enough yeast. The charts shows the probability of successful fermentation when pitching a single packet of dry yeast or single package of liquid yeast. The charts break down the risks by batch size and OG.
